Squash

There are so many varieties of squash to try, from delicate yellow summer squash and zucchini to creamy and sweet fall and winter squash varieties like pumpkin, acorn, and butternut. And let’s not forget unique squash varieties, like spaghetti squash! No matter the variety, cooking with squash will add color, flavor, and nutrients to your meal, and we have plenty of delicious and easy squash recipes to choose from.

During the summer months, try some of our zucchini squash recipes and yellow squash recipes, like Simple Sautéed Vegetables or Oven Roasted Ratatouille. Did you know you can even eat summer squash raw? Yep, summer squash and zucchini make an excellent addition to cold Summer Vegetable Pasta Salads or cut into crudités on a vegetable platter.

If you’re looking to go low-carb, learn How to Cook a Spaghetti Squash in a Slow Cooker, then use it as a base for a meal like Southwest Spaghetti Squash Bowls.

But my favorites are the sweet squashes of fall and winter. Baked squash recipes like our Smoky Maple Roasted Acorn Squash make a beautiful and delicious side dish for your holiday meals. Butternut squash recipes, like our Chipotle Butternut Squash and Quinoa Salad or Butternut Squash Pasta Salad are always a hit when the weather starts to get cooler. Whether you prefer winter squash or summer squash, squash makes a delicious and inexpensive addition to any meal. Try one of our squash recipes out with dinner tonight!
