-Self Rising Flour -Olive Oil -Zucchini -Salt _Pepper
Preheat the oven to 350ºF. Line a 11×7-inch baking dish with parchment paper.
Finely dice yellow onion and finely chop bacon. Add butter to a frying pan and heat over medium. Add the onion and bacon and sauté until the onion is soft and the bacon is golden. Remove from the heat and set aside.
Grate zucchini into a colander and sprinkle a little salt on top. Set aside.
In a large mixing bowl add the bacon and onion, along with eggs, shredded cheese, self-rising flour, and olive oil. Stir well to combine.
Pour mixture into prepared tray.
Bake for 35-40 minutes, until cooked through and firm to the touch. Allow to cool, then cut into squares to serve.
