Melissa Nolan

Melissa is a proud Jacksonville native who attended FSU earning a business hospitality degree and a minor in anthropology. She then went to Johnson and Wales University to fulfill her dream of becoming a chef. Melissa’s culinary experience includes interning at Thomas Keller’s famed Per Se Restaurant in NYC and working at many of Northeast Florida’s finest restaurants. The past 5 years she has been able to share her knowledge and fallen in love with teaching at JAX Cooking Studio as a Chef Instructor. She’s excited for the next step in her career at Budget Bytes as a Recipe Developer. Her favorite things include coffee, dogs, and of course, FOOD!

About Melissa

Melissa Nolan was born and raised in sunny Jacksonville, Florida, where family has always been at the heart of her story. As the youngest of three girls, she’s always looked up to her big sisters, Jennifer and Meghan, and they continue to be her rock to this day. Her mom, Mary, is a retired schoolteacher and amazing home chef. Her love for the kitchen sparked Melissa’s passion for cooking early on. She could frequently be found at her mother’s side, tasting, stirring, and eventually helping with nightly dinners. Her dad, James, is a retired crane technician who taught her the importance of hard work, dedication, perseverance, and family devotion. These are all lessons that continue to guide her today.

At just 15, Melissa jumped into the culinary world with her first job at Nicole’s on the River, a local mom-and-pop restaurant still run by her incredible first boss and mentor, Bobbie Taylor. Bobbie took Melissa under her wing and showed her what it truly means to work in a restaurant. This included long hours, fast-paced environments, and teamwork. Melissa worked at this restaurant throughout her high school years and really found an appreciation for the culinary
world during that time.

After high school, she was accepted to Florida State University, where she earned her degree in Business Hospitality with a minor in Anthropology (she still dreams of being Indiana Jones). While at FSU, Melissa learned how to balance academics with leadership. She became the Supervisor of Elections, and also worked as a server at the exclusive University Center Club, located in the stadium. FSU helped her understand the business side of the industry and helped prepare her for future careers.

Determined to turn her passion into a lifelong career, Melissa pursued formal culinary training at Johnson & Wales University in Charlotte, North Carolina. There, she excelled in earning straight A’s (and one B) before completing a prestigious internship at Thomas Keller’s 3-Michelin-starred restaurant, Per Se, in New York City. She worked alongside some of the best chefs in the world and learned that excellence in the kitchen requires not just skill, but precision, patience, and heart.

Returning home to Jacksonville, Melissa worked and trained under renowned chef Tom Gray at Bistro Aix, a beloved French restaurant. Over ten years, she rose through the ranks from grill cook to Executive Chef, mastering every station from dishwasher to butcher. She also gained experience at sister concepts, including Cowford Chophouse, Il Desco Italian restaurant, and Ovinte tapas lounge, broadening her expertise across a variety of cuisines and techniques. As Executive Chef at Bistro, she led the kitchen with creativity and precision, crafting seasonal menus and collaborating closely with the front-of-house team to create unforgettable dining experiences. Beyond the kitchen, Melissa shared her passion for food through writing and photography for JAX Restaurant Reviews, the city’s most popular food blog at the time, and contributed articles to the national magazine, Edible.

After a decade in restaurants, Melissa moved on to the next chapter of her life. She was lucky enough to continue her work in the culinary industry and found her true passion for education (thanks, mom!). For five years, she was able to share her knowledge and fell in love with teaching at JAX Cooking Studio as a Chef Instructor. Under the guidance of founder and mentor Terri Davlantes, Melissa honed her skills in recipe development, class design, and culinary storytelling. She learned more about different cuisines, techniques, baking, and international food. She discovered the joy of empowering others through food and teaching not just how to cook, but how to love cooking.

Now, Melissa is thrilled to bring her experience and passion to Budget Bytes as a Senior Recipe Developer. With over 20 years in the culinary industry, every chef, every kitchen, and every class has shaped her into the creative professional she is today. She believes deeply in Budget Bytes’ mission, that delicious food shouldn’t be complicated or expensive. Food is meant to be shared and enjoyed by everyone, and Melissa is excited to create recipes that make that possible.

When she’s not in the kitchen, you’ll find her spending time with her family, friends, and her amazing partner, Chris. Together, they love exploring local farmers’ markets, discovering new coffee shops, enjoying football games, and getting outdoors whenever they can. At home, she still loves cozy weekends filled with good food, good company, and at least one dog to pet. Melissa can’t wait to share her culinary creativity and love of food with the Budget Bytes community, one flavorful, accessible recipe at a time.
