4fresh peaches(halved and pitted, (515g uncut) $2.32*)
1Tbspvegetable oil(divided, $0.04**)
½tspground cinnamon($0.02)
2Tbspgranulated sugar($0.06)
4scoopsvanilla ice cream(16 oz, $0.99)
½cupwalnuts(chopped, (60g) $1.32)
2Tbsphoney($0.31)
Instructions
Gather and prepare all ingredients. Preheat the grill to 400°F.
Carefully cut around each peach and remove the pit.
Brush the cut sides of the peaches with half of the oil and set aside.
Once the grill is hot, place the peaches, cut side down, on the grill. Brush the tops with the remaining oil. Grill for 3-4 minutes until softened and grill marks form.
Using a pair of tongs***, flip the peaches over. In a small bowl, combine the cinnamon and sugar and sprinkle on top.
Continue grilling for another 3-4 minutes until the sugar starts to melt. Remove the peaches and set them aside.
Divide the grilled peaches into 4 plates or bowls. Add a scoop of vanilla ice cream, chopped walnuts, and a honey drizzle to each plate. Serve immediately.
*I bought clingstone yellow peaches. Make sure to choose slightly firmer peaches because they will be cooked. Overly ripe peaches will become too mushy on the grill.**I used vegetable oil to save money, but if you already have olive oil or another preferred oil on hand, you can use that as well.***If the peaches stick to the grill, use a fork or spatula to release them. Don’t crush the peaches with the tongs.
