Yummy Yogurt Parfait

It’s peach season! This week I scored big when I found peaches on sale for $1/pound. My favorite breakfast/sweet tooth fix is a yogurt parfait! While this parfait can be made with a number of different fruits and crunchy bits, I’m definitely going to take advantage of peaches while they’re around. The best part about this snack is that the ingredients keep for a fairly long time so all you have to buy fresh is the fruit!

1 medium peach $0.28
1/3 cup vanilla yogurt $0.25
1 Tbsp (1/4 oz.) slivered almonds $0.14

STEP 1: Wash the peach well under running water to get rid of the “dry fuzz” feeling. Chop the peach up into 1/2 inch cubes and place in your dish.

STEP 2: Top the peach with 1/3 cup yogurt.

STEP 3: Sprinkle almonds over top and enjoy!

When peaches aren’t in season I love to make this with a sliced up banana (which can usually be purchased for a fairly low price). If you find that your fresh fruits tend to go bad before you use them up, you can buy frozen fruit and briefly thaw them in the microwave before adding to the parfait. Almonds can be pricey but if used sparingly, they don’t add too much cost to a recipe. If you keep the almonds sealed air-tight, they should last you quite some time. I also love to top the parfait (either with the nuts or in place of the nuts) with a tablespoon of dry oats. I usually do this when I am packing the parfait for lunch so they have time to soak up liquid and soften by lunch time.
