Lemony White Bean Salad

What You Need:

-Olive Oil -Lemon Juice -Red Wine Vinegar -Dijon Mustard -Garlic

-Salt -Pepper -Cannelli Beans -Red Onion -Parsley

Make the Lemon Vinaigrette first so the flavors have a few minutes to chill. Simply whisk together olive oil,  lemon juice, red wine vinegar,  Dijon mustard, minced garlic, salt, and freshly cracked pepper.

Rinse and drain canned cannellini beans.

Thinly slice red onion and roughly chop parsley. Add the beans, onions, and parsley to a bowl, then pour the vinaigrette over top.

Chop and Combine

Stir the ingredients together until well combined. Taste and adjust the salt or pepper to your liking.
