Rinse and drain black beans and black eyed peas in a colander.
This salad features tons of colorful summer vegetables. You'll need Roma tomatoes, jalapeño, red onion, bell pepper, and cilantro.
Finely dice the bell pepper, tomatoes, jalapeño, and red onion. Roughly chop the cilantro leaves. Place the chopped vegetables in the bowl with the rinsed beans.
Pour the prepared dressing over the salad.
Stir the salad until everything is coated in the dressing. Serve immediately or refrigerate until ready to eat.
