Cut red onion into 1-inch pieces. Place them in a bowl, drizzle with cooking oil, then toss to coat.
Cut pineapple into 1-inch chunks.
Cut boneless, skinless chicken breasts into one-inch pieces.
Drizzle cooking oil over the chicken, then add smoked paprika, garlic powder, salt, and pepper. Toss until the chicken is well coated in oil and spices.
Build your chicken kebabs on skewers by alternating between the pineapple chunks, onion, and seasoned chicken.
Heat a grill or grill pan over medium. Once hot, add the kebabs and cook for a few minutes on each side. Once cooked through, brush them on all sides with BBQ sauce. Cook for a minute or two more on each side, or until cooked through and the BBQ sauce is caramelized.
